INGREDIENTS

1 Dozen Shucked Oysters
Small Coriander bunch – including the root
1 red Chilli
50ml Mirin or Rice Wine Vinegar
Black Pepper
3 x Limes Squeezed
Method

METHOD

Step 1

Wash Coriander including the root to remove any excess sand/soil

Step 2

Place Coriander, Chilli (Stemmed), Black Pepper in a mortle & Pestle and grind into a paste

Step 3

Add Mirin & lime juice to mortle & Pestle & mix

Step 4

Spoon mix onto the Oyster in the Shell & Enjoy
